Fancy a festive dish that's festive, healthy, and quick to make?! This Mediterranean fish stew brings flavor, color, and cheer to the table – perfect in combination with the new Catchy Party Edition – Part 1: The culinary catch plates from Bordy's.
Fish stew, serves 4
30 minutes preparation time
Ingredients
500g fish (e.g., cod and salmon), chopped
200g shrimp, peeled
1 large onion, chopped
3 cloves garlic, finely chopped
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
400g Mutti Polpa fine tomato pulp (canned)
3 tomatoes, diced
100ml dry white wine
2 tbsp olive oil
1 tsp paprika
1 tsp (dried) oregano
Salt and pepper to taste
Fresh parsley (optional), finely chopped
Preparation:
Sauté the base
Heat the olive oil in a large pan. Add the onion and garlic and sauté until soft and translucent.
Add the color
Add the bell peppers and cook briefly. Sprinkle with paprika and oregano to release the flavors.
Deglaze & simmer
Deglaze with the white wine, bring to a simmer, then add the diced tomatoes and pulp. Simmer gently for about 10 minutes.
Add the fish
Place the fish pieces and shrimp on top of the sauce and gently press them in. Season with salt and pepper. Cover and simmer for 5-7 minutes, until the fish is cooked through. Or bake in a covered ovenproof dish or terrine for 10-15 minutes, as I did here. See our vlog about this recipe on Instagram & Facebook.
Serve
Sprinkle with fresh parsley just before serving. Place the pan or casserole dish in the middle of the table and let everyone help themselves. Pair it with some delicious freshly made mashed potatoes or crispy bread for dipping in the sauce.
It's perfectly complemented by the new Bordy's collection. This combination truly creates a feast for the table. Enjoy, and you can view the entire collection here!
