Creamy pasta salad with chicken and yogurt dressing

This creamy chicken pasta salad is perfect for a refreshing lunch or light dinner. The combination of whole wheat pasta, crisp lettuce, juicy tomatoes, and a mild yogurt dressing makes for a nutritious and filling dish, without being heavy. Cooking the pasta in chicken broth adds extra flavor. Ideal for weeknights, but also delicious to share.


Lunch, serves 3-4

Preparation time: 20 minutes


Ingredients

225g whole wheat pasta

Chicken broth

6 slices chicken breast

250g tomatoes

200g romaine lettuce

1 avocado

1 shallot

2 tsp parsley

60g Greek yogurt

2 tsp olive oil

1 tsp lemon juice

1 tsp mustard

1 clove garlic

Salt & pepper



Preparation

Cook the whole wheat pasta in plenty of water and chicken broth according to the package directions. Drain and let cool slightly. Meanwhile, combine the Greek yogurt with the olive oil, lemon juice, mustard, crushed garlic, salt, and pepper to make a smooth dressing. Halve the tomatoes and chop the romaine lettuce. Slice the avocado and thinly slice the red onion. Slice the chicken breast. Place the cooled pasta in a large bowl and toss with some of the dressing. Add the lettuce, tomatoes, chicken breast, avocado, and red onion and toss gently. Drizzle with the remaining dressing and toss once more. Garnish the pasta salad with finely chopped parsley and serve immediately.
