Poke Bowl fun… à la Lenthe & Karen

In the afternoon, we went out to gather all the ingredients for the perfect poké bowl: fresh, healthy, and lovingly selected. We got the salmon from Neeltje Jans (Taste Zeeland), because, well, salmon has to be super fresh, of course. Then we popped into the supermarket for the rest: perfectly ripe avocados and mangoes, crunchy cucumber, fresh carrots, and of course, delicious sticky rice. Once home, the real work began: in the kitchen, everything was carefully chopped, grated, and prepared. Meanwhile, we tasted, laughed, and of course, prepped. Once everything was ready, the bowls could be assembled: colorful, fresh, and packed with flavor.
The result? A delicious poké bowl and a fun afternoon together. Definitely worth repeating!
Lunch or dinner, serves 4
Preparation time: 20-30 minutes
Ingredients
(sushi) rice
400 g fresh salmon fillet
1 cucumber
200 g carrots
2 avocados
can of corn
soy sauce
sesame seeds
Preparation
Cut the salmon, mango, and cucumber into small cubes. Slice the avocado and grate the carrot. Cook the rice according to the package directions (cook for 10 minutes, then simmer for at least 5 minutes in the pan). Fill a bowl with a base of rice and then top with all the ingredients. Sprinkle the sesame seeds over the Pok Bowl and add soy sauce to taste.
