Caesar Salad Light

After the holidays, we're all a little... full. Time to loosen those tight pants! We're kicking off Healthy January with this healthy Caesar salad recipe. Check out the full tutorial video on our TikTok channel, because Bordy's is also keeping up with the times!
Lunch, serves 4
20 minutes preparation time
Ingredients
Chicken
2 tbsp olive oil
300 g chicken breast, shredded
2 tbsp Ketjap Manis
Salt & pepper
Dressing
240 ml Greek yogurt
Juice of ½ lemon
0.5 tsp mustard
0.5 tsp garlic powder
0.5 tsp onion powder
0.5 tsp salt
0.25 tsp pepper
Salad
4 boiled eggs, quartered
1 head of romaine lettuce
2 avocados, sliced
60 g Parmesan cheese, grated
2 tsp chives, finely chopped

Preparation
Sauté the chicken in the olive oil and add a generous splash of Ketjap Manis. Combine all the dressing ingredients in a bowl and stir until smooth and creamy. Taste and season with lemon or pepper, if needed. Wash the lettuce and chop or tear it into pieces. Hard-boil the eggs, peel them, and cut them into wedges. Slice the avocado. Place the lettuce in a large bowl and top with the chicken, eggs, and avocado. Spoon the dressing liberally over the top. Grate with Parmesan cheese and garnish with finely chopped chives.
